Grilled Veggie and Hummus Wraps

Ingredients:

1 zucchini, sliced 🥒

1 red bell pepper, sliced 🫑

1/2 red onion, sliced 🧅

1 tablespoon olive oil 🫒

Salt and pepper to taste 🧂

4 whole wheat wraps 🌯

1/2 cup hummus 🥙

Fresh spinach or mixed greens 🌿

Instructions:

Preheat a grill or grill pan over medium heat.

Toss the zucchini 🥒, bell pepper 🫑, and onion 🧅 in olive oil 🫒, salt, and pepper 🧂.

Grill the veggies for 4-5 minutes on each side until tender and lightly charred.

Warm the wraps 🌯 and spread a generous amount of hummus 🥙 on each one.

Add the grilled veggies, top with fresh spinach 🌿, and roll up the wraps.

Serve immediately and enjoy!
